Green Chile Apple Cobbler


Chile Pie and Ice Cream is a cozy cafe at the corner of Baker and Fulton.  This apple cobbler recipe is inspired by their house specialty pie.  Instead of a sweet apple pie with cinnamon they add the kick of jalapeno pepper as well as some walnuts and cheese.  It makes a tasty lunch.

Green Chile Apple Cobbler

7 apples, peeled and sliced
1/2 cup walnuts, chopped
1 jalapeno pepper, seeded and finely chopped
juice of 1/2 a lime
1 cup unbleached flour
1 tsp baking powder
1 egg, lightly beaten
1/4 cup melted butter
1/2 cup milk
1/2 cup grated cheddar cheese
2 Tb liquid honey
pinch of chile powder

Preheat oven to 400.  Put apples in a bowl and toss gently with lime juice and then stir in walnuts and jalapeno.  Place them evenly in a buttered 8x8 baking pan.  In one bowl combine flour and baking powder.  In another bowl combine egg, butter and milk, and then add them to the flour, stirring just until mixed.  Spread evenly over apples and sprinkle the cheese on top.  Bake for 40 minutes.
Cool for a few minutes and then cut in four pieces.  Gently heat honey with chile powder over low heat, stirring constantly, and drizzle on top.  Enjoy!
